Ingredients
- 1 cup whole green moong dal (mung beans)
- 1 small onion, finely chopped
- 1 medium tomato, finely chopped
- 1 small cucumber, finely chopped
- 1 small carrot, grated
- 1 green chili, finely chopped (optional)
- 2 tablespoons fresh coriander leaves, chopped
- Juice of 1 lemon
- 1 teaspoon chaat masala
- 1/2 teaspoon roasted cumin powder
- Salt to taste
- 1 tablespoon olive oil (optional)
- 1/2 teaspoon black pepper (optional)
How to Make Green Moong Dal Salad
Soak the Moong Dal. Rinse the whole green moong dal thoroughly. Soak it in water for at least 4-6 hours or overnight. This will help soften the beans and reduce cooking time. Cook the Moong Dal. Drain the soaked moong dal and transfer it to a pot. Add enough water to cover the beans and bring it to a boil. Reduce the heat and let it simmer for about 20-25 minutes until the beans are tender but not mushy. Alternatively, you can pressure cook the beans for 1-2 whistles. Drain any excess water and let the beans cool completely. Prepare the salad by combining the cooked and cooled moong dal, chopped onion, tomato, cucumber, grated carrot, and green chili. Add the fresh coriander leaves, lemon juice, chaat masala, roasted cumin powder, and salt. Mix well. Drizzle with olive oil and sprinkle black pepper if desired for extra flavor. Serve the salad chilled or at room temperature as a healthy snack or side dish.
